Ingredients:

  • 1 cup frozen blueberries, thawed
  • 8-10 fresh mint leaves
  • 2 tbsp lime juice
  • 1 tbsp honey or simple syrup
  • 1½ cups sparkling water or lime soda

Directions:

  1. Muddle thawed blueberries and mint leaves in the bottom of two glasses.
  2. Add lime juice and honey to each glass and stir to combine.
  3. Fill glasses with ice.
  4. Top with sparkling water and stir gently.
  5. Garnish with extra mint and serve immediately.
