A naturally sweetened jam made with just strawberries, chia seeds, and lemon, no pectin or added sugar needed.

  • 3 cups frozen strawberries, thawed
  • 2 tbsp chia seeds
  • 1 tbsp lemon juice
  • 1-2 tbsp maple syrup, to taste
  1. Add thawed strawberries to a saucepan over medium heat and mash with a fork or potato masher.
  2. Simmer for 8-10 minutes, stirring occasionally, until the fruit breaks down.
  3. Stir in chia seeds, lemon juice, and maple syrup, then simmer 5 more minutes until thickened.
  4. Remove from heat and let cool; the jam will continue to thicken as it sits.
  5. Transfer to a jar and refrigerate for up to 10 days.
